"Naturally grown rice, koji, and cedar barrels inherited." Fukui Marukawa Miso is a collaborative brewery founded in 1914. Domestic organic soybeans and domestic organic wheat are fermented and aged for over 10 months, and then naturally brewed. The texture retains the graininess of the rice koji, and the flavor has a natural sweetness of rice.

This is authentic traditional organic miso, fermented naturally in wooden barrels.
We use koji mold that is harvested in-house, which is rare even in Japan!


[Attention to detail]
Domestic organic soybeans and organic rice are stored in traditional cedar barrels. This is a naturally brewed miso that is left to ferment and mature for over 10 months at its natural fermentation rate. This "Koji miso" in particular uses wild koji mold that has been self-collected and has been living in the brewery for over 90 years since the brewery was founded. Kawasaki's miso brewery is the only one in Japan that has successfully produced organic miso using natural koji mold.

This is a spicy miso with a fragrant soybean flavor. It goes well with miso soup, and even when simply dipped in cucumber, the miso's deliciousness stands out.
