"The pursuit of producers, water, and fermentation." Made by the Sennari Brewery, a collaborative venture between Daichi and his brother. Made from domestically-grown JAS-certified organic rice and mineral-rich natural mountain water. Compared to the usual accelerated fermentation process, which usually takes 3 days to 1 week, this sake is left to ferment for 4 and a half months.

This is a carefully crafted pure rice vinegar made only from mineral-rich natural water that flows through the mountains and domestically grown, JAS-certified organic rice.

While many breweries use accelerated fermentation and make their sake in 2-3 days, we use static fermentation to ferment and mature our sake for 4.5 months, resulting in a mellow flavor. We use only the best ingredients and make our sake using traditional methods to bring out the best flavor. We have nothing to hide, so please enjoy our authentic, traditional flavor.
