This black vinegar is made from Akita Komachi, a germinated brown rice that is certified organic from Ogata Village, Akita Prefecture.

<Organic JAS> We use Akitakomachi, germinated brown rice that is certified organic from Ogata Village, Akita Prefecture. (Germinated brown rice is brown rice that is germinated, and it is said that more active ingredients such as alpha-amino acids (GABA) are produced than in regular rice. The vinegar is brewed using the traditional static fermentation method, resulting in a mellow black vinegar. No additives are used, and the brewing water is 100% natural groundwater. This organic brown rice black vinegar is made from 100% organic germinated rice.
