This is unbleached kanpyo (dried gourd) from Tochigi Prefecture. The fruit of the evening primrose is peeled into strings and dried in the sun. It is not fumigated with sulfur, so it is soft and has an exceptional aroma and flavor that is unique to kanpyo. [How to rehydrate kanpyo]
(1) Rinse lightly with water (no need to rub with salt)
(Products that have been treated with bleach tend to have hard tissue, so they are rubbed with salt to break down the tissue before use.)
(2) Put the dried gourd from (1) and plenty of water in a pot and heat it. Bring it to a boil and let it plump up in 7 to 8 minutes.
*If you freeze the boiled kanpyo, you can use it easily whenever you want.
