The pork buns are an original creation of the ranch, filled with meat from Tategamori Highland Pork and wrapped and steamed by hand by the ranch staff using a skin made from organic wheat grown without pesticides on the ranch's own farm.

Ark Tategamori (Tategamori Ark Farm) "Tategamori Highland Pork" is a breed of pig that we encountered in the United States 30 years ago, and we have been breeding and improving it for Japan for many years to suit the unique tastes of Japan. While many breeds around the world prioritize productivity and rationality, this is a rare breed in the world that pursues the taste and quality of the meat. Although it cannot be denied that it is inferior to other breeds in terms of productivity, we offer it as a very rare breed that matches the value of producing safe, secure and delicious pork that we aim for. The red meat has very fine muscle fibers, and is soft and rich when put in the mouth, while the fat is a clear white color, and you can feel the umami and sweetness of the fat when you put it in your mouth. It is also characterized by having no odor peculiar to meat and good firmness.
The quality of meat from pigs varies greatly depending on the environment they are raised in. We raise each pig with love and care, minimizing stress as much as possible, so that we can provide our customers with the most delicious meat.
