At our soy sauce brewery in the small town of Yabu in Hyogo Prefecture, we prepare domestically grown organic soybeans and wheat in a cedar storehouse and let them mature slowly as the temperatures change throughout the seasons. We aim to maintain traditional natural fermentation methods and create products that are linked to the place of production, delivering authentic flavors.
This soy sauce is aged for over a year to bring out the flavor of the ingredients.

As temperatures change throughout the seasons, we leave the brewing to the yeast and microorganisms that live in the cedar brewery, and we continue to carry on the natural brewing method of slowly aging the sake for one to two years. In order to get to know the producers and use ingredients that are free of post-harvest and genetic modification, we are deepening our ties with farmers, fishermen, and brewers in Japan.
