Scamorza is a dried cheese.
You can enjoy the mild, mild milk flavor.
You can slice it as is and enjoy the milky flavor, or grill it and make it like a cheese steak.

Both the farm and cheese factory have obtained JAS organic certification, aiming to produce cheese that is not only delicious but also safe and of a high level.
To obtain certification, a ranch must meet dozens of very strict regulations regarding grazing land, feed, cattle sheds, etc.
Similarly, cheese-making factories must also meet dozens of regulations before they can receive certification.
Only after obtaining both the ranch and workshop certification can a product be sold as organic.

▼ Commitment to cows
The cows are allowed to graze freely, eating grass, drinking water, sleeping and spending their time freely and stress-free in this vast, organically certified pasture, before returning to the milking shed unprompted in the evening.
The pastures near the sea have a sloping slope and the cattle are raised on a grass-fed pasture. Under these conditions, it is best to raise cattle that are as close to the original breed as possible. That cattle breed is the Jersey breed. Less than 1% of the cattle are raised in Japan. They are slim, active, and eat well, and each has their own unique personality and charm. This means that they are smaller in size and produce less milk than the Holstein breed, which means that the milk has a low yield and is not very suitable for making cheese.
But we know the valuable deliciousness of that cheese. The rich and clean taste of their health-conscious milk, the movement of microorganisms, and the power of nature. When all of these elements come together, the best cheese is made.
