This product is made using 100% Uonuma brown buckwheat, which is grown without pesticides in the snowy Uonuma region using nutritious meltwater.
We store unpolished buckwheat in a snow room to prevent deterioration of its freshness and flavor, and use buckwheat that is kept fresh.

By storing the buckwheat in a snow room, we are able to prevent deterioration of its freshness and flavor, and then grind it in a stone mill while it is still fresh and makes noodles.
This is a flavorful soba noodle dish characterized by its rich soba soup.
At Ichikara Farm, we grow buckwheat without pesticides at Dokou Plateau in Uonuma City and Yotsukoyama in Ojiya City.
